Easy Peppermint Bark Recipe

Easy Homemade Peppermint Bark

Peppermint bark is a super easy Christmas candy. Package it in a pretty tin for a perfect gift!

Equipment

  • double boiler
  • kitchen scale
  • rolling pin or meat mallet

Ingredients
  

  • 12 ounces semi-sweet or dark chocolate
  • 16 ounces white chocolate
  • ½ -1 teaspoon peppermint extract
  • ½ cup crushed peppermint candies or candy canes
  • 1-2 tablespoons coconut oil optional

Instructions
 

  • Crush peppermints or candy cane pieces. Set aside.
  • Line a cookie sheet or upside down cake pan with parchment paper
  • Melt semi-sweet chocolate in a double boiler over medium low heat or in the microwave in 30 second intervals stirring between each time.
  • Spread chocolate on the parchment paper in a thin, even layer. Refridgerate for 15 minutes or until hardened.
  • Melt white chocolate in a double boiler over medium low heat or in the microwave in 30 second intervals stirring between each time – see note
  • Add peppermint flavor and stir to incorporate.
  • Quickly spread melted white chocolate over chocolate layer.
  • Sprinkle peppermint pieces on top and lightly press them into the white chocolate.
  • Refridgerate for 15 minutes or until hardened.
  • Break or cut into pieces.

Notes

Chocolate is prone to burning so melt slowly, stirring frequently.
Be extra careful not to get water in your chocolate. It will cause your chocolate to seize and ruin it.
If your white chocolate isn’t melting well, add 1-2 tablespoons of coconut oil to help.
